we are looking at second hand dysons and have the choice of a dc07 animal or for a bit more cash a dc14 allergy, apart from the dc14 being newer is the technology between the two more or less the same?

Yes, the technology is similar, they are both multicyclones and have the similar suction power. However, the DC07 has a significantly bigger bin (but consequently is harder to carry up the stairs!)

I've owned them both and both were very good. As with any old vacuum cleaner the performance will drop with age, especially if it's been abused. Just based experience of people I know this seems to be particularly true of the DC07 though. The DC14 seems to fair rather better (ours is still going very strong) but perhaps that's just because it's a newer model so they haven't been around for so long...or perhaps being a newer model it may be more robust to abuse, for example sucking up plater dust.

If it was me I'd go for the DC14 if it isn't too much more.

Choose a DC07 as the motor will last longer. However, do choose one from some place that knows what they are doing. Don't get one from a "garden shed" operator on eBay.
